This is my take on the classic Italian Piadina (or Piada) – classic may be slightly stretching the description for these parts, but they are very popular in the Ravenna area, and sometimes I’m lucky enough to find them in Lidl!

We made the mistake of not heating them up the first time, and to put it politely, they were unpleasant – heated up they undergo a miraculous transformation and turn in to some sort of Italian manna. This one is a mozzarella, tomato and smoked ham, and not quite cooked in the traditional manner, but it is lovely!
